Learn How To Make Vegetable Pulao Recipe, an authentic Indian Rice Recipe, from The Bombay Chef - Varun Inamdar only on Rajshri Food. <br />Make this simple, quick and easy to make rice recipe from the Indian Cuisine at your home and share with us your experiences in the comments section below. <br /> <br />Ingredients:- <br />2 cups chopped vegetables (carrots, beans, peas, cauliflower or any of your choice) <br />salt as required <br />3 cups water <br />1½ cups basmati rice (washed and soaked in cold water for 15 minutes) <br />2 tbsp ghee <br />½ tsp cumin seeds <br />1 small onion sliced <br />5-8 cashew nuts <br /> <br />For Potli spice mix:- <br />1 Bay Leaf <br />1 Star Anise <br />1 large strand of mace <br />2 green cardamoms <br />2 green chillies <br />1 black cardamom <br />4 cloves <br />5-6 peppercorn <br />1-inch cinnamon stick <br />1 tsp fennel seeds <br />2 green chillies <br />2 cloves of garlic <br />2 cm piece of ginger <br />Muslin cloth required <br />Muslin cloth required <br /> <br />Method:- <br />- In a muslin cloth tie the spice mix ingredients tightly. <br />- In a pan heat ghee and add cumin seeds, onions, salt and cook till golden brown on a moderate flame. <br />- Add in the cashew nuts, chopped vegetables, green peas, water, salt and the spices tied in the muslin cloth (Potli). <br />- Once the water starts boiling, add in the rice and stir very gently. Allow this to boil on high flame for 10-12 minutes. <br />- Once the water evaporates, lower the flame and cover with the lid and let it cook for 8-10 minutes. <br />- Discard the spice mix bag (Potli) carefully. <br /> <br />Vegetable Pulao is ready to eat!
